You can easily meal prep some of these ingredients on a Sunday, it takes less than half an hour and then you can easily prepare this nourish bowl as a lunch throughout the week.
Ingredients
1 cup cooked quinoa
1 cup mixed baby greens
About 1/4 of a brick of Air fried extra firm Tofu (see vegan sushi recipe here for tofu marinate)
1 medium size shredded carrot
1 cup shredded purple cabbage
1/2 cup steamed edamame
1/2 cup chopped red bell pepper
2 tbsp chopped green onion (optional)
Vegan sriracha Mayo as a dressing (see dressing recipe here)
Directions
- Cook quinoa, steam edamame and air fry tofu for the week as per your needs. Prep vegan sriracha mayo and keep in a jar. Once ready, Toss all ingredients in a bowl and add sriracha mayo on top and enjoy!
