If you’re looking for a high protein and a satisfying meal, then this nourish bowl is for you. This nourish bowl is If you’re looking for a high protein and a satisfying meal, then this nourish bowl is for you. This nourish bowl is very easy but requires some meal prepping. You can easily meal prep some of these ingredients on a Sunday, it takes less than half an hour and then you can easily prepare this nourish bowl as a lunch throughout the week.

Ingredients

  • 1 cup cooked quinoa

  • 1 cup mixed baby greens

  • About 1/4 of a brick of Air fried extra firm Tofu (see vegan sushi recipe here for tofu marinate)

  • 1 medium size shredded carrot

  • 1 cup shredded purple cabbage

  • 1/2 cup steamed edamame

  • 1/2 cup chopped red bell pepper

  • 2 tbsp chopped green onion (optional)

  • Vegan sriracha Mayo as a dressing (see dressing recipe here)

Directions

  • Cook quinoa, steam edamame and air fry tofu for the week as per your needs. Prep vegan sriracha mayo and keep in a jar. Once ready, Toss all ingredients in a bowl and add sriracha mayo on top and enjoy!
