Sweet potato PB & J toast!
This breakfast is so tasty, filling & satisfying. I never though I’d like the taste of sweet potato with added sweetness but it’s just so good & I had to share it with you guys! Not to mention, how easy it is to make this breakfast! I use all these ingredients for an entire sweet potato or 2 small sweet potatoes but I’ve only pictured 2 slices in this reel. Feel free to add a side of veggies to make this even a more filling breakfast or just have it as a delicious snack!

Ingredients

  • 1 medium size sweet potato

  • 1/2 banana

  • 1 cup frozen strawberries

  • 1 tsp maple syrup (optional or use stevia)

  • 1 tbsp chia seeds

  • 2.5-3 tbsp powdered peanut butter (mixed in 3 tbsp water)

Directions

  • Carefully and thinly slice sweet potato. Air fry or bake at 400 F for 12-14 minutes. While potato is cooking, prepare strawberry jelly by tossing strawberries, chia seed and maple syrup in a sauce pan. Cook over low/medium heat (stirring constantly) for about 7-10 minutes. Chia seeds will help thicken up the jelly. Keep aside.
  • Mix powdered PB with water per your consistency and keep aside. Once sweet potato is cooked, assemble your toast and enjoy as a snack or your breakfast.
