Easy and delicious way to eat your oats in the morning!
If you’re tired of eating your oats the same way, then try this combination. Lemon zesty flavor combined with poppy seeds is so flavorful and cozy. I always add veggies to every oatmeal to decrease calories and to sneak in veggies. Feel free to omit cauliflower rice if you don’t want to or add in a scoop of vanilla protein powder if you want to boost the protein content.

Ingredients

  • 2/3 cup GF thick rolled oats

  • 2/3 cup frozen cauliflower rice (I get from Costco)

  • 1/2 cup water

  • 1/2 cup plant milk of your choice (I used unsweetened soy milk)

  • 1 tsp (+/-) fresh lemon juice

  • 1 tsp lemon zest

  • 1 tbsp. poppy seeds (or add 1 tsp for less fat & calories)

  • Toppings:
  • 1 scoop vanilla protein powder (Optional, I didn’t add any to this recipe)

  • 1 tbsp date syrup (+/- or can use maple syrup)

  • 2-3 tbsp. plant based low fat yogurt (I used oats)

  • 2/3 cup fresh strawberries (or use any other fruit of your choice)

  • 1 banana

Directions

  • Toss all ingredients in a sauce pan and cook on stove top for about 10-12 minutes. Transfer to a bowl and stick it in the fridge to cool. Once oats have cooled off, add plant yogurt on top, drizzle date syrup and fresh fruit. Enjoy!
