Easy oil free vegan Siracha Mayo!
If you’re like me who avoids vegan mayo as it’s loaded with sugar, oils and whole bunch of other unnecessary ingredients, then try this Vegan Sriracha Mayo. Don’t get me wrong vegan mayo is a great alternative but I like my food to be as minimally processed as possible. Try this mayo, it turns out just as good without any added oils or processed sugars. I have been meal prepping this lately to add to my weekly buddha bowls, or as a dipping sauce for potato fries or sandwiches for my kids lunches. Ingredients

  • 1 block of soft organic Silken tofu (or use medium firm for thicker sauce)

  • 1 tsp garlic powder

  • 2 tsp Sriracha (+/-)

  • 2 tsp maple syrup (+/-) per taste

  • 1 tbsp white vinegar (or use apple cider vinegar)

  • 1 tsp lemon juice (+/-) (optional)

  • salt per taste

Directions

  • Drain water from Tofu, Toss all ingredients in a high speed blender and blend till smooth. Give it a taste test and adjust spices/vinegar per your taste. Pour it in glass jar and store in the fridge for up to a week! You can also use it as a dipping sauce with your potato fries, on buddha bowls or salads.
