Healthy Mexican Inspired weight loss nourish bowl for you! This is my absolute favorite way to eat lots of veggies with ton of flavor. I have been making this bowl at least 2-3 times a week.

This bowl is so satisfying and will keep you full for hours!

Ingredients

  • Large handful of mixed greens

  • 1/2 cup bell pepper

  • 1/2 cup cucumbers

  • 1/2 cup cherry tomatoes

  • 1/2 cup red mango

  • *2/3 cup of corn & black beans mixture (See my potato nacho recipe for this)

  • *1 medium size pre-steamed air fried white potato (with your fav. seasoning)(I used Chipotle mango seasoning and salt)

  • 2 tbsp of pickled red onion (optional)

  • 1/4 cup salsa

  • 2-3 tbsp low fat vegan queso sauce (I bought from Costco – It’s by Good foods and called “Plant Based Queso style dip”) (Or you can use humus dressing 3 or my cheese sauce , version 1)

  • Habanera hot sauce to drizzle on top (optional)

  • 1 tbsp chopped cilantro (optional)

Directions

  • Use pre-cook beans and corn mixture as per my recipe from my potato nachos. Air fry pre-steamed white potato with your fav. seasoning. Chop the rest of the ingredients and assemble your bowl and Enjoy!

Notes

  • *Meal prep is required to make this bowl on the go. Make beans and corn mixture ahead of time and keep in the fridge.
  • *Use pre-steamed potatoes to speed up the process. Pre-steamed potatoes also turn out more crispier than raw in an air fryer.
  • My cheese sauce version 1 has very similar ingredients as plant based queso (minus the fat) from costco.
