Ingredients

  • 1/2 cups thick rolled oats (I used gluten free)

  • 1 large handful of spinach

  • 7-8 cremini mushrooms

  • 1/2 cup cherry tomatoes

  • 1 cup veggie broth (or use 1/2 tsp better than bouillon & 1 cup water)

  • 1 tbsp water to Sauté

  • 1 tsp umami mushrooms seasoning

  • 1/2 tsp chili flakes (+/-)

  • 1 clove freshly grated garlic

  • 1/2 tsp grated ginger

  • salt per taste

  • 1/2 tsp toasted sesame seeds to sprinkle on top (optional)

Directions

  • Chop mushrooms and cherry tomatoes. Sauté mushrooms for about 5-7 minutes with all the seasoning, till they start releasing water. Add halved cherry tomatoes, cook for another 3-4 minutes. Add veggie broth and oats. cook for another 5-7 minutes till oats start to soften.
  • Once done add spinach, give it a good mix and let spinach wilt/cook from the heat. Serve with a 1/2 tsp of toasted sesame seeds on top and enjoy!

Notes

  • Feel free to add any other veggies of your choice but I highly recommend mushrooms as they give great Umami flavor.
  • Feel free to double/triple the recipe and cook in advance for easy meal prep.
