Are you tired of eating Oats for breakfast all the time? If so, then you must try this delicious Teff porridge to switch things up. Not only is Teff gluten free, high in iron and super tasty, it’s also known as one of the “superfoods”. Did you know Teff helps reduces PMS symptoms, helps manages blood sugars and also low in fat? I find, when I consume Teff, it helps me stay full much longer than Oats!

Ingredients

  • 1/3 cup Teff

  • 1.5-2 cups (shredded carrots)

  • 2-2.5 cups water (per your desired consistency)

  • 1 tsp vanilla extract

  • 1 tbsp cacao powder

  • 1/4 unsweetened plant milk

  • 1 tbsp maple syrup (or sweetener of your choice)

  • Toppings:
  • 1 sliced ripe banana

  • 2.5 tbsp powdered peanut butter mixed in water to make sauce (optional)

Directions

  • In a pan, add all ingredients except maple syrup and milk, Cook on stove top on a low/medium heat for about 20 minutes. Make sure to keep stirring occasionally as Teff tends to stick to the bottom of the pan as it cooks. Once Teff is cooked, add plant milk. Give it a good mix.
  • Transfer to a dish, add maple syrup, PB sauce , sliced banana on top & Enjoy!

    • Hi Annya, I buy Bob’s red mill brand. Make sure its not Teff flour but Teff grain, Its very small tiny brown seeds. I hope this helps.
