Smashed Cucumber & Edamame Salad

Ingredients
2 cups steamed shelled edamame
5 mini field cucumbers
1/4 cup chopped cilantro
1/2 tsp chili flakes (optional, +/-)
1 tsp black sesame seeds
- Dressing
1-1.5 tbsp low sodium Tamari or soy sauce
Juice of half a lime
1-2 tsp maple syrup
1 tsp grated ginger (optional)
1/2 tsp sesame seed oil (optional but highly recommend)
Directions
- With the back of a firm glass or knife, smash mini cucumbers and cut them in small pieces, transfer to a bowl. To the same bowl add 2 cups of steamed shelled edamame and cilantro. Keep aside.
- In a small bowl, prep your dressing by adding tamari, juice of half a lime, maple syrup, grated ginger, sesame seed oil. Mix everything nicely, taste test and adjust.
- Pour the dressing onto the salad. Feel free to add chili flakes per your preference, sprinkle some black sesame seeds. Mix well and enjoy! Feel free to watch my YouTube video linked below to see how I made this.
