Ingredients

  • For Tofu
  • 350g extra firm tofu pressed and crumbled

  • 2 tsp corn starch

  • 2.5 tsp Mango Chipotle seasoning by Club House

  • Beans/Corn Mixture:
  • 1 cup black beans (rinsed & washed)

  • 1 red bell pepper finely chopped

  • 1 medium red onion finely chopped

  • 1 cup frozen corn kernels

  • 1.5 tbsp Mango Chipotle seasoning by club house

  • 1 tsp cumin powder

  • 1 tsp crushed chili flakes (+/-)

  • 1/2 tsp dried oregano

  • 1/2 tsp smoked paprika (optional)

  • 1/2 tsp garlic powder

  • 3.5 tbsp tomato paste

  • salt per taste

  • 1/2 – 2/3 cup water (adjust per desired consistency)

  • 2-3 sprays of Avocado oil (optional or skip)

  • For Assembly:
  • 2 tortilla wraps of your choice (cut one of the tortilla in small circle)

  • 1 hard taco shell

  • 1/4 of an avocado

  • Cashew sour cream ( I use my cesar salad dressing with less water and no chives to make sour cream. Recipe here)

  • 1 tbsp chopped red onion

  • 1 tbsp cilantro

  • 10g vegan cheddar cheese (I used Violife brand, or omit)

Directions

  • Preheat oven to 400 F. Crumble tofu in pieces by hand, add seasoning, mix nicely. Spread it evenly on a lined baking tray and bake or air fry at 400 F for 20 minutes. Make sure to keep tossing tofu every 7 minutes to bake/crisp evenly.
  • To a large skillet add 2 or 3 sprays of oil, add red onion and sauté till golden brown. Once onions have browned, add all the seasonings, water and ingredients and cook until corn kernels are soft (about 5-7 minutes). After about 7 minutes, stir in baked/air fried tofu crumbles and sauté for another 2-3 minutes until everything is well combined.
  • Assemble your taco with all your favorite ingredients. Fold your wrap tightly and grab one side of the tortilla and pull it up towards the center. Place the wrap seam down in the skillet and cook for 2-3 minutes on each side until golden brown. Feel free to add a heavy skillet on top to press down the wrap. Cut wrap in half and enjoy
