Roasted Edamame in air fryer

minutesAdd these roasted edamame beans to your buddha bowls, or use as a snack. These are so easy to make, super tasty and make a perfect crunchy snack when you need one!

Ingredients
500 g edamame beans (I used frozen)
1 tsp smoked paprika
1/2 tsp garlic powder
1 tsp corn starch
1/2 tsp chili powder
Salt per taste
1-1.5 tbsp coconut brown sugar
1/2 tsp dried dill (optional, omit) or use any other herbs/seasonings
2 tsp vanilla extract
5-6 quick sprays of avocado oil
Directions
- Keep edamame beans outside for at least 2 hours to defrost or defrost in microwave. Once fully defrosted, toss them on a clean kitchen towel and pat dry as much as possible. Make sure to do your best to dry them out otherwise they will not turn out crunchy. Remove skin (this will allow for seasoning to coat nicely).
- Toss them in a bowl with seasoning, and some avocado spray. Close lid and shake to coat. Spread on an air fryer basket and air fry at 400 F for 20 minutes or bake in the oven at 400 F for 20 minutes. Make sure to flip half way through. Enjoy them as a snack or on top of your buddha bowls. Store them on kitchen counter in an air tight container or mason jar for up to a week.
