Ingredients

  • 1/2 cup yellow lentils

  • 1 cup water to soak

  • 1 small red onion

  • 2 tpsp chopped cilantro

  • 1/2 tsp garam masala

  • 1/2 tsp chili powder (+/-)

  • salt per taste

  • 2/3 cup of water to blend lentils

  • Optional Toppings:
  • 1 small avocado

  • 1 small red onion

  • 1 large tomato or cherry tomatoes

  • lemon or lime juice

  • 1 tbsp chopped cilantro

  • salt per taste

Directions

  • Soak lentils for at least 30 minutes with 1 cup of water. Rinse thoroughly. Transfer to a blender with 2/3 cups of water, garam masala, salt, chili powder and blend till smooth.
  • Transfer batter to a dish, add finely chopped onion, cilantro and mix. Pre-heat waffle griddle, spray with avocado oil if needed to prevent from sticking, pour batter and cook each waffle one by one till brown/crispy. Enjoy with your favorite toppings on top.

Notes

  • You may wish to use Yogurt dipping sauce or Indian Tamarind sauce
  • You may turn this into a sweet waffle by omitting all the salt and spices and cook it plain with water, cinnamon or vanilla extract. Top it off with berries/fresh fruit of your choice and some maple syrup.
