Ingredients

  • 1/2 cup steel cut oats

  • 2 cups shredded carrots (or reduce per your liking.)

  • 1-1.5 tsp cinnamon

  • 2.5 -3 cups water (adjust per your consistency)

  • 1/2 cup frozen cauliflower rice

  • 1-2 tsp maple syrup as sweetener

  • 1/4 cup unsweetened plant milk (I used soy)

  • Toppings: 1/2 cup strawberries, 1/2 cup blueberries, 1/2 a mango

Directions

  • In a pot add the oats, cinnamon, water and carrots. Cook on medium heat for about 15 minutes. Stirring occasionally.  
  • Add 1/2 cup cauliflower rice and cook for another 5 minutes.
  • Once cooked, add plant milk and maple syrup. Serve in a large bowl with fresh fruits on top.

Notes

  • This is weight loss friendly oats. It is low in calorie density due to carrots and cauliflower rice.
  • Feel free to add PB & ME Powder sauce on top (That’s powdered peanut butter mixed in water).
