Ingredients

  • 2 cups thick rolled oats (I used gluten free)

  • 1/2 cup millet grounded into flour

  • 2/3 cup mashed sweet potato (about 1 medium size )

  • 2 large very ripe bananas

  • 4-5 pitted Medjool dates finely chopped

  • 1/3 cup unsweetened apple sauce

  • 1/4 cup chopped walnuts (optional)

  • 1/2 cup water

  • 1/2 cup unsweetened plant milk

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp vanilla extract

  • 1 cup fresh or frozen blueberries (I used fresh)

Directions

  • Preheat oven to 350 F. Mash bananas and sweet potato. Add all wet ingredients into this mix.
  • On a separate dish, add all your dry ingredients along with chopped walnuts, 1/2 cup blueberries and chopped dates. Mix wet into dry. Make sure to mix gently. Pour oats mixture on a baking dish. Add remaining blueberries on top & push them in slightly.
  • Bake at 350 F for 45-50 minutes. Let cool, serve and enjoy.

Notes

  • Feel free to add fresh blueberries on top when serving
  • If you use frozen blueberries, Oats will turn out more wet.
