Ingredients

  • *1 cup whole wheat flour (can use GF flour)

  • 1 cup oat flour ( I used GF oats to make flour)

  • *1/2 cup unbleached white flour (can use GF)

  • 2 large ripe bananas

  • 1/2 cup coconut brown sugar

  • 2 tbsp ground flax (Make flax eggs with 6 tbsp water)

  • 1/3 cup vegan choc chips

  • 2 tsp vanilla extract

  • 1 tsp baking powder

  • 1 tsp baking soda

  • pinch of salt

  • 1 cup unsweetened plant milk

  • 1/3 cup chopped walnuts or 1-2 tbsp hemp seeds (optional)

Directions

  • Preheat oven to 350 F. . Make flax egg in a small bowl and keep aside. Mash bananas and add all wet ingredients into this mix.
  • In another bowl add all dry ingredients. Mix wet into dry. Line muffin tray with parchment liners or silicon liners. Add batter to each muffin tin. Bake at 350 for 15-20 minutes or till tooth pick comes out clean. Remove from the oven, let cool and enjoy!

Notes

  • You can omit walnuts if you wish to make them nut free, add hemp seeds instead for healthy fats.
  • *If you’re gluten free, then Bob’s Red Mill brand has many gluten free flour options. Feel free to use any of those flours in this recipe.
