Easy Roasted Butternut SquashCourse: Sides
1 medium size butternut squash
1.5 -2 tbsp roasted garlic & pepper (club house) seasoning
1/2 tsp -1 tsp chili powder (+/- adjust per your tolerance)
Salt per taste
1-2 tbsp chopped cilantro to sprinkle on top (optional)
5-6 sprays of Avocado oil (helps to stick the seasoning)
- Pre-heat oven to 400 F. Wash and dry squash. Carefully cut butternut squash in circles, remove any seeds and then cut circles in halves again. No need to remove skin. Baked butternut squash skin actually tastes great!
- Toss everything in a baking dish, add your spices, spray 5-6 avocado oil sprays and use your hand to toss all the seasoning evenly on all the pieces. Bake in the oven for 35-40 minutes. Remove from the oven, sprinkle cilantro on top if you wish and enjoy as a side dish.
- This is a perfect side for meal prepping!
