Low Fat Vegan Protein BarsCourse: Snacks
2 cups quick cooking oats
1 ripe banana
1-2 tbsp maple syrup (depending on your preference)
2 scoops of vegan chocolate protein powder (I used Nuzest brand, get 15% off)
1/4 cup dark vegan chocolate chips (I used Lilly’s sweetened with Stevia)
1/3 cup defatted powdered peanut butter (I get this brand here)
1 tbsp peanut butter
1/4 cup water (+/-) to mix defatted peanut butter
1/4 cup defatted peanut butter mixed with water to pour on top
- Mash banana, add all your ingredients in to the same bowl. Mix defatted peanut butter with water and 1 tbsp of peanut butter and add to oats. Mix well. Lay the mixture on a 8×8 baking tray and press down evenly. Pour more defatted peanut butter on top if you desire and freeze for 2 hours before cutting into slices and serving.
- These can store in the freezer for days. Before eating, remove from the freezer and let it thaw out or microwave for 10 seconds for quick and grab snack.
- You may wish to add nuts to this recipe but keep in mind that it will increase fat content of these bars.
