Easy Vegan Chocolate Tofu MousseCourse: Dessert
*1/2 a block of medium firm tofu or can use Silken soft Tofu
1/2 cup of unsweetened soy milk (or use any other)
4-5 pitted medjool dates (+/- per your preference)
2 tbsp cacao powder
1 cup fresh or frozen blueberries (I used fresh)
1 tsp vanilla extract
1 tsp cacao nibs
1/2 tsp toasted coconut flakes (optional)
- Toss everything in a high speed blender and transfer to a small glass. Add your toppings. Keep it in the fridge to chill and taking it out right before serving it! Enjoy.
- If you’re using soft Silken Tofu, you may need to adjust your milk quantity or omit.
