Simple and delicious way to meal prep and eat your oats! These overnight mango oats is my new obsession! This recipe is so simple and absolutely refreshing. If you love Mango then you’re going to love these oats. Its a perfect meal prep recipe and you can make 2-3 jars in advance for the week. They can last in the fridge for up to 3 days.

Ingredients

  • 1/2 cup GF thick rolled oats

  • 2/3 cup frozen mangoes

  • 1/2 cup water

  • 1/2 cup plant milk of your choice (I used unsweetened soy milk)

  • 1.5 tbsp chia seeds

  • 1 tbsp maple syrup (or use Stevia)

  • Toppings:
  • 1 scoop vanilla protein powder (Optional, I didn’t add any to this recipe)

  • 1/2 cup frozen mangoes

  • 1 tsp unsweetened shredded coconut (or use toasted coconut flakes)

Directions

  • Toss 2/3 cup of mangoes, water, plant milk and maple syrup in a blender and blend roughly to break mango chunks.
  • Add oats, chia seeds to a mason jar and pour blended mango mixture. Give it a good mix. Top it with some more frozen mangoes and coconut flakes. Keep overnight in the fridge and enjoy next morning!

Notes

  • These can last in the fridge for up to 3 days! To further decrease calories, feel free to add stevia as sweetener.
