Ingredients

  • 1 very ripe large banana

  • 1/3 cup mashed sweet potato

  • 1 tbsp cacao powder

  • 1/2 plain brown rice cake

  • 1/3 cup frozen cherries

  • 1/4 cup fresh strawberries (optional, add more or less per your taste)

Directions

  • With a fork, mash banana and sweet potatoes in a bowl. Add 1 tbsp cacao powder and mix really well. Keep aside.
  • On a serving dish, break rice cake into small pieces, add some broken rice cake at the bottom, add chocolate mousse on top. Feel free to add more rice cakes on top. Add frozen cherries and some fresh strawberries on top. Enjoy!

Notes

  • Make sure to eat right away as rice cake/crisps will get soggy and will not taste crunchy.
  • Having a very ripe banana is the key for this dessert to be naturally sweet.

  1. Do you blend the frozen cherries into the sweet potato/banana mixture ?

    • Hi Nancy, I just add the frozen cherries on top. You can thaw them out a bit if you like or put them in microwave for few seconds and add on top.
