1/2 diced red mango
1 yellow or red bell pepper
1 large shredded carrot
Large handful of mixed baby greens
1 cup diced cucumber
*1/2 cup cooked oil air fried tofu
quarter of an avocado (or omit during weight loss phase)
1/2 cup cooked brown rice
- Toppings:
1 tsp toasted sesame seed
sushi ginger
Noori sheet
Siracha

- Cook tofu in air fryer or bake in the oven as per my Crispy Tofu recipe .
- While tofu is getting cooked, chop all your ingredients and assemble your poke bowl. Once tofu is cooked, add tofu, drizzle PB sauce , toasted sesame seeds and siracha on top and Enjoy!
