BBQ Veggies & Tofu Skewers

- Veggies used for skewers:
Extra firm tofu
cremini mushrooms
red onion
mini peppers
pineapple (medium ripe)
corn on the cob (as a side)
- *Sauce to marinate Tofu:
1.5 tbsp soy sauce
1-2 tsp maple syrup
1 tsp sriracha
1/2 tsp garlic powder
1/2 tsp onion powder
- Sauce for veggie skewers:
1.5 tbsp hot sauce
1/2 tsp onion powder
1-2 tsp lemon juice
salt per your taste
1 tsp club house vegetable seasoning
Directions
- Marinate tofu at least an hour & keep aside. Wash, cut all your veggies and pineapple. Assemble your skewers with veggies and tofu. Brush all your veggies with the sauce and grill. Feel free to BBQ corn on the side like we did.
- Enjoy veggie skewers with any oil free sauce of your choice. We used pesto sauce to dip our veggies in. (See my pesto sauce recipe here or try with Sriracha Tofu Mayo)
Notes
- *Marinate tofu for 1-1/2 hour & keep aside. Taste & adjust sauce per your liking.
