Palak Tofu / Spinach & Tofu

15-20 oz. of fresh baby spinach or frozen
1 block of extra firm tofu (pressed)
1 large onion finely diced
1 large tomato finely diced
1 tbsp grated ginger
3-4 green Thai chilies finely chopped (adjust per your tolerance)
4 cloves of garlic finely minced
2 tsp garam masala
salt per your taste
1/4 cup cilantro for topping (optional)
Directions
- Press tofu, remove excess water and cut in cubes. Toss it in a bowl, add 1 tsp garam masala & salt per your taste. Toss to combine. Bake in air fryer for 18 minutes at 400 F. Make sure to flip half way through. Or Lay tofu cubes on a lined baking tray & bake in the oven at 400 F for 18 minutes and remember to flip half way through.
- While tofu is air frying, On a skillet, sauté spinach on the stove on medium heat till its wilted & releases water (about 3-4 mins). Toss it in a blender and pulse for few seconds. Keep aside.
- On the same skillet, sauté onion on low heat. Keep adding 1 tbsp of water at a time to sauté. This will take about 10-12 mins on low heat. Once onions are browned, add diced tomato, ginger, garlic and green chili. Cook till tomatoes are fully cooked. Add pulsed spinach and air fried tofu. Cook for approx. 5 mins. Add 1 tsp garam masala, cilantro & gently mix to incorporate garam masala. Cook on low heat for another minute.
- Serve it on top of brown/white rice and enjoy!
