Ingredients

  • 1/2 cup canned black beans (rinsed)

  • *1/2 cup canned corn (or can use frozen)

  • *1 large air fried or baked potato

  • 1/3 cup pico de gallo

  • large handful of mixed baby greens

  • *1 steamed beets

  • squeeze of lemon juice

  • Sauce or Dip
  • See Spicy Mango dip as a sauce or use Spicy Jalapeno Humus

Directions

  • Dice up all your ingredients and use canned corn or canned beans to make things easier and quicker. Create your Buddha bowl with your favorite veggies and enjoy it as a last minute meal idea.

Notes

  • *This recipe requires bit of meal prep in advance by having cooked corn, potatoes and beets in advance. *If you’re using frozen corn, make sure its cooked. Use pre-steamed baked potato and toss in air fryer for 10 minutes to make it crispy.
