Easy Vegan Breakfast | High Protein. Say hello to your new chia seed pudding! If you’re tired of oats and need variety, then try this delicious chia seed pudding for breakfast!

Ingredients

  • 30g chia seeds

  • 1 tsp cacao powder

  • 2 scoops of chocolate Protein powder (I used @Nuzest, get 15% off – use code: SLIMONPLANTS )

  • 1 cup unsweetened almond milk (or use half/half ratio with water)

  • 1 tsp vanilla extract

  • Some stevia drops (optional, to add extra sweetness)

  • Toppings:
  • 50g banana (about 1/2 a banana)

  • 45g 2 fresh figs

  • 1/2 tsp cacao nibs

  • 1 tsp toasted coconut flakes

  • 13g defatted PB powder mixed in water

Directions

  • Mix all the ingredients in a bowl, transfer to a jar and refrigerate overnight. In the morning, transfer to a bowl, add more liquid (plant milk) if desired and stir nicely. Add toppings on top and enjoy as a filling breakfast on the go.
