Quinoa Puff balls for a healthy afternoon snack.

Calories: 73, Protein: 4.6g, Fat: 2.7g, Carbs: 9.3g

Ingredients

  • 2 (40g) cups puffed quinoa

  • 85g defatted powdered peanut butter (PB2, PB & Me brands)

  • 1/2 cup + (+/- 1-2 tbsp water) to make thick peanut butter like consistency for defatted peanut butter powder

  • 1.5 tsp vanilla extract

  • 30g dark chocolate chips (sweetened with stevia, I used Lilly’s)

  • Some stevia drops (to add extra sweetness)

  • 15g dark melted chocolate to drizzle on top ( I used 70% Lindtt)

Directions

  • Mix powdered peanut butter with water, stevia drops in a bowl, keep aside. Add 2 cups of puffed quinoa in another bowl, add powdered peanut butter, dark chocolate chips and form them in a ball one by one. Drizzle some melted chocolate on top if you wish. Store remaining puff balls in the refrigerator for upto 2 weeks.

Notes

  • I like to air fry them for 3-4 minutes after removing from the fridge before consuming!
