Easy High Protein Humus with Lupini beans.
Macros per 100g Serving:
Calories: 120, Protein: 9.6g, Fat: 5.7g, Carbs: 10.3g

Ingredients

  • 1 cup cooked edamame

  • 150g lupini beans (I used brami) or used canned

  • handful of baby spinach

  • 2 tbsp tahini

  • whole head of roasted garlic (+/- per your preference)

  • 1/2 tsp cumin powder

  • 1/2 tsp chili flakes (+/- per tolerance)

  • juice of 1/2 a lemon (+/- per taste)

  • 1/3 cup water (+/- per consistency) or can use 1-2 tbsp olive oil if not oil free

  • salt per taste

Directions

  • Toss all ingredients in a food processor and process till smooth while leaving some texture. Taste, adjust spices as needed. Serve it as a snack, inside your sandwiches or on top of buddha bowls. Enjoy!
