- For Beans & Corn Mixture:
1 cup black beans (canned, washed/rinsed)
1 cup frozen corn
1/2 red bell pepper
1/2 green pepper
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp chili flakes
1/2 tsp onion powder
1 tbsp chipotle mango seasoning or use Taco seasoning
salt per taste
Juice of 1/2 a lime when done
- For Nachos:
2 large white potatoes (Pre-steamed/cold)

1/2 cup cherry tomatoes
1/4 red onion
1/4 avocado (or omit during weight loss)
1 tbsp chopped cilantro
Juice of 1/2 a lime
Salt per taste
- Additional Toppings:
Salsa
Pickled jalapeno
Directions
- Chop bell peppers. Toss all ingredients in a medium sauce pan and cook on a low/medium heat for about 10-12 minutes till corn is soft.
- While beans/corn mixture is cooking, cut your potatoes in rounds as thinly as possible and air fry for 14-16 minutes at 400 F.
- Prepare pico de gallo by chopping all ingredients and keep aside. Once potatoes are air fried, assemble your nachos with all the toppings and enjoy!
