Ingredients

  • For Beans & Corn Mixture:
  • 1 cup black beans (canned, washed/rinsed)

  • 1 cup frozen corn

  • 1/2 red bell pepper

  • 1/2 green pepper

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp chili flakes

  • 1/2 tsp onion powder

  • 1 tbsp chipotle mango seasoning or use Taco seasoning

  • salt per taste

  • Juice of 1/2 a lime when done

  • For Nachos:
  • 2 large white potatoes (Pre-steamed/cold)

  • 1/2 cup cherry tomatoes

  • 1/4 red onion

  • 1/4 avocado (or omit during weight loss)

  • 1 tbsp chopped cilantro

  • Juice of 1/2 a lime

  • Salt per taste

  • Additional Toppings:
  • Low fat cheese sauce

  • Salsa

  • Pickled jalapeno

Directions

  • Chop bell peppers. Toss all ingredients in a medium sauce pan and cook on a low/medium heat for about 10-12 minutes till corn is soft.
  • While beans/corn mixture is cooking, cut your potatoes in rounds as thinly as possible and air fry for 14-16 minutes at 400 F.
  • Prepare pico de gallo by chopping all ingredients and keep aside. Once potatoes are air fried, assemble your nachos with all the toppings and enjoy!
