Ingredients

  • 1/3 cup corn grits

  • 1/2 cup black beans (use canned)

  • 1 medium zucchini

  • 1 red bell pepper

  • 1 small red onion

  • 1 tsp Club house roasted garlic and peppers seasoning

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp chili flakes (+/-)

  • Salt per taste

  • 1 tbsp chopped Cilantro (optional)

  • Hot sauce for top (Optional)

  • Low fat Vegan cheese sauce as a topping (Optional)

Directions

  • Cook corn grits per package directions with some salt, stirring occasionally and keep aside.
  • While corn grits are cooking, chop veggies and sauté them on a low/medium heat with the seasoning for about 10 minutes. Feel free to add 1 tbsp of water if veggies are sticking to the pan. Add cooked black beans or canned beans and sauté for another 5 minutes. Once done, sprinkle cilantro on top. Serve with corn grits and enjoy !

Notes

  • Feel free to add my low fat cheese sauce on top for extra flavor!
