Healthy Pumpkin Oat cookies

2.5 cups thick rolled oats (I used gluten free)
1 cup good quality pumpkin puree (canned)
1 tsp pumpkin spice
1/4 maple syrup (or can use agave syrup)
1/4 cup vegan dark chocolate chips ((or add in pecans, walnuts, raisins, dried unsweetened cranberries, pumpkin seeds)
Directions
- Pre-heat oven to 350°F. Toss everything in a bowl, give it a good mix. Line a baking tray with parchment paper. Form into cookies shape and space them out evenly on the tray. Remember, these cookies will not spread or change shape during baking so be sure to create the shape you want before baking. Bake for 15 minutes. Let them cool and enjoy.

- *Feel free to experiment or customize these cookies with any other add in’s. These cookies store well at room temperature for up to 3 days, and after that they can be kept in the fridge.
