Ingredients

  • 1 cup thick rolled oats (I used gluten free)

  • 1/2 pumpkin puree (canned)

  • 1/2 tsp pumpkin spice

  • 1 diced apple

  • 2 cups water

  • 2 tsp maple syrup (or sweetener of your choice)

  • 1/4 cup unsweetened plant milk

  • 6 pecans for topping (optional)

Directions

  • Cut apple in small pieces. Toss everything in a pot except pecans and maple syrup. Cook till oats are soft on stove top (about 7-10 minutes). Once oats are cooked, add 1/4 cup plant milk. Transfer to a bowl, add maple syrup and pecans on top. Enjoy!

Notes

  • Feel free to add additional fruits such as fresh blueberries or a banana on top.
