Ingredients

  • 1 cup thick rolled oats (I used gluten free)

  • 1 cup millet (Intact whole grain or can use millet flour)

  • 1 ripe banana

  • *1 tsp pumpkin spice

  • *1.25 cups water

  • 1 cup unsweetened plant milk

  • Fruit Compote
  • 1 cup frozen blueberries

  • 1 cup frozen strawberries

  • Additional Toppings:
  • Fresh fruit

  • Maple syrup

  • Powdered sugar (optional)

Directions

  • Pre-heat your non-stick waffle griddle. Toss millet, GF oats and all other ingredients except toppings and fruits in a high speed blender till batter is smooth.
  • Pour the batter into a hot waffle griddle and repeat the process till all waffles are done.
  • While waffles are cooking, prepare your fruit compote by tossing frozen berries into a pan and heating on the stovetop for few minutes (about 5-8 on low/medium heat).
  • Let cool, serve with fruit compote or fresh fruits and some maple syrup on top.

Notes

  • *Feel free to switch out spice to cinnamon, vanilla or cacao powder for chocolate waffles.
  • *Note: batter will thicken as it sits, so feel free to adjust the batter by adding bit more water and giving it a good mix with a spatula.
  • 4 Servings are for full size waffles.
