This crunchy, protein-packed granola is perfect for meal prep and makes an easy breakfast or snack throughout the week. Enjoy it on top of yogurt, with plant-based milk as a cereal, or by the handful!

Ingredients

  • Dry Ingredients
  • 100g (3.5 oz) About 1 cup thick rolled oats

  • 100g (3.5 oz) About 1 cup Dry TVP (Textured vegetable protein)

  • 30g (1 oz) About 1/4 cup raw walnuts

  • 30g (1 oz) About 1/4 cup raw pumpkin seeds

  • *30g (1 oz) About 1/4 cup oil free raisins (See notes)

  • 1 scoop (25g – 0.8 oz) unflavoured pea protein powder (I Used Sprout living) Code: SlimOnPlants to save 20% off

  • 1 tsp cinnamon

  • Wet Ingredients:
  • 1/4 cup (85 ml) maple syrup

  • 1 tsp vanilla extract

  • 2 tbsp (32g -1 oz) natural peanut butter

  • 1 tbsp (12g ) extra virgin olive oil or any other neutral oil

Directions

  • Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine all of the dry ingredients and stir until everything is evenly mixed.
  • Add all of the wet ingredients directly to the bowl and mix thoroughly until the oats and TVP are evenly coated.
  • Spread the granola onto the prepared baking sheet in a thin, even layer. Avoid piling it too thick, as this helps it bake evenly and become crisp.
  • Bake for 15–16 minutes, or until lightly golden.
  • Remove from the oven and allow the granola to cool completely before breaking it into clusters. It will continue to crisp up as it cools.
  • Transfer to an airtight glass container and store at room temperature for easy breakfasts throughout the week. Watch my linked YouTube video for step by step instructions.

Notes

  • Sprinkle over your favorite yogurt parfait.
    Enjoy with soy milk as a high-protein breakfast cereal.
    Top smoothie bowls or oatmeal for added crunch.
    Grab a handful as a quick snack.
  • Tip: If you want your raisins to stay soft and chewy, don’t bake them with the granola. Stir them in after the granola has cooled.
