Add these high protein vegan Seitan Nuggets to any of your meals to increase your protein intake.

Calories: 225, Fat: 2.8g, Carbs: 14.4g, Protein: 35.1g, Fiber: 5.3g, Leucine: 2.0g

  • Preheat oven to 350 F. Add all dry ingredients in one bowl and mix. Add lupini beans, water and any hot sauce of your choice in a high speed blender and blend till fully smooth.
  • Add lupini beans mixture onto dry ingredients and gently knead the dough till it comes together. Make sure not to over knead as this dough tends to get rubbery. Line a baking tray with parchment paper and form small bite size nuggets one by one. Lay on the baking tray and bake at 350F for 35-38 minutes. Make sure to flip half way through.
  • Once done, let them cool off to store in the fridge or enjoy them with your meals throughout the week for extra added protein!
