minutesAdd these high protein vegan Seitan Nuggets to any of your meals to increase your protein intake.
Macros, per 135g:
Calories: 225, Fat: 2.8g, Carbs: 14.4g, Protein: 35.1g, Fiber: 5.3g, Leucine: 2.0g
Ingredients
170g vital wheat gluten flour (I use this: Bob’s Vital Wheat Gluten)
30g nutritional yeast (I use this: Anthony’s Nutritional Yeast)
1 tsp cumin powder
1 tsp garlic powder
1/2 tsp chili powder (+/-)
1/4- 1/2 tsp salt (+/-)
210g Brami Lupini beans
1 cup water
Any hot sauce of your choice (I used cool running brand or omit)
Directions
- Preheat oven to 350 F. Add all dry ingredients in one bowl and mix. Add lupini beans, water and any hot sauce of your choice in a high speed blender and blend till fully smooth.
- Add lupini beans mixture onto dry ingredients and gently knead the dough till it comes together. Make sure not to over knead as this dough tends to get rubbery. Line a baking tray with parchment paper and form small bite size nuggets one by one. Lay on the baking tray and bake at 350F for 35-38 minutes. Make sure to flip half way through.
- Once done, let them cool off to store in the fridge or enjoy them with your meals throughout the week for extra added protein!
