This is a yummy and a healthy on the go breakfast if you need it. Its crispy on the outside and soft on the inside. It can also be a healthy treat when you want something healthy, quick and easy. Trust me, everyone in your family is going to love this cookie & you’d want to make this over & over! Here is how to make it
Ingredients
1/2 cup rolled oats (40 g)
1/4 cup pumpkin puree (60g)
1 tbsp vanilla protein powder (10g) (I used Nuzest, get 15% off using my links)
1/2 tsp pumpkin spice
1/2 tsp baking powder
*2 tsp dried unsweetened cranberries (10g)
*1 tsp pumpkin seeds (5g)
pinch of salt
1 tbsp nut butter of your choice (15g) (I used peanut butter)
2 tsp maple syrup (+/-) per taste
Directions
- Toss everything in a bowl and mix nicely. On a lined parchment paper or silicon matt, Pour the mixture and form into a cookie shape. Add some cranberries /pumpkin seeds on top to make it look pretty. Air fry at 360 F for 10 minutes and enjoy!

- You may wish to use vegan chocolate chips or white chocolate chips instead of cranberries or pumpkin seeds.
