Ingredients

  • 1 cup thick rolled oats (I used gluten free)

  • 1 ripe banana

  • 1/2 cup plain plant milk (unsweetened)

  • *1/2 cup water

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1 large handful of baby spinach

  • 1 scoop of vanilla protein powder (I use Nuzest, get 15% off using my discount)

  • Toppings:
  • Fresh berries of your choice

  • 1 tbsp Maple syrup (optional)

Directions

  • Toss and blend all ingredients on a high speed blender. Cook pancakes one by one on a non stick skillet on a low/medium heat. Enjoy with some fresh berries and some maple syrup on top.

Notes

  • This recipe makes about 4-5 pancakes depending on your size.
  • *To further reduce calories, just add 1 cup of water instead of milk
