Protein Banana Oatmeal Pancakes (GF)

1 cup thick rolled oats (I used gluten free)
1 ripe banana
1/2 cup plain plant milk (unsweetened)
*1/2 cup water
1 tsp vanilla extract
1/2 tsp baking powder
1 large handful of baby spinach
1 scoop of vanilla protein powder (I use Nuzest, get 15% off using my discount)
- Toppings:
Fresh berries of your choice
1 tbsp Maple syrup (optional)
Directions
- Toss and blend all ingredients on a high speed blender. Cook pancakes one by one on a non stick skillet on a low/medium heat. Enjoy with some fresh berries and some maple syrup on top.

- This recipe makes about 4-5 pancakes depending on your size.
- *To further reduce calories, just add 1 cup of water instead of milk
