Soba Noodles Stir Fry

Ingredients
50 grams soba noodles (buckwheat flour)
1/3 block of extra firm tofu
6-7 Large bokchoy
1 pack of cremini mushrooms (227 grams
1 red bell pepper
1.5 tsp corn starch
1 tbsp Kikkoman Garlic Teriyaki sauce
1 tsp toasted sesame seeds (optional)
1/4 cup chopped green onions (for toppings)
For peanut sauce:3 tbsp powdered peanut butter
1 tbsp Tamari sauce (low sodium)
1.5 tsp maple syrup
1.5 tsp rice vinegar
1.5 tsp Sriracha (+/-)
1/4 tsp ginger powder (or use freshly grated)
2-3 tbsp water to thin out sauce (+/-)
- For Tofu Marinate:
1 tbsp Tamari
Sriracha per tolerance
1/4 tsp ginger powder
1 tsp maple syrup
Directions
- Cut tofu in small cubes and let marinate for at least half an hour. Then air fry for about 7-8 minutes at 400 F. Cook soba noodles per directions. Drain, rinse with cold water and keep aside.
- Chop mushrooms, bokchoy, bell peppers and keep aside. Toss mushrooms in a big frying pan and saute for about 5-6 minutes on a low/medium heat. Add chopped bokchoy and bell peppers cook for about 2 minutes. Add corn starch, garlic teriyaki sauce and cook for another 2 minutes. Turn off stove and keep your veggies aside. Once tofu is air fried, toss in the frying pan, add soba noodles and pour low fat pb sauce on top. Gently mix. Transfer to a serving dish, add green onions, toasted sesame seeds on top and enjoy!
