Here is a quick 10 minute healthy snack or meal idea! This is perfect to make on days when you’re lazy and don’t want to put much effort into your meal. This also works as a healthy, crunchy snack when you crave one! You can omit avocado sauce if you like or while on your weight loss journey. Feel free to adjust spices to your liking and enjoy!

Ingredients

  • 1 Ice berg or Romaine lettuce

  • 1 can of chick peas

  • 1 cup frozen corn or can use canned

  • 1.5 tsp smoked paprika (+/-)

  • 2-3 tbsp Frank’s hot sauce (+/-)

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin powder

  • salt per taste

  • 1-2 tbsp. chopped cilantro (optional)

  • Avocado Sauce (Optional)
  • 1/4 of an avocado

  • 1 green Thai Chili (+/- or omit)

  • 1 tbsp. lime juice

  • 1/4 cup cilantro

  • 3-4 tbsp. water to blend

  • salt per taste

Directions

  • Wash and rinse a can of chick peas. In a saucepan add chick peas and frozen or canned corn. Toss in all your spices and cook on a low/medium heat for about 10 or till corn is soft. Stirring occasionally.
  • While chickpeas are cooking, you can prep your avocado sauce. Taste and adjust. Lay out as many washed and dried lettuce leaves on a plate as you wish. Spread chick peas mixture on top, add chopped cilantro, drizzle avocado sauce and enjoy!

Notes

  • If you’re not feeling lazy, feel free to add any other veggies of your choice to chickpeas/corn mixture while cooking.
  • *You may wish to skip avocado sauce during weight loss phase.
