Easy one pot meal with Bulgur

1 cup dry bulgur (or use quinoa)
4 cups frozen veggies
1/2 a block of extra firm tofu
1 can of chickpeas (drained & rinsed)
1 large onion
5 minced garlic cloves
1 tsp grated ginger
4 thai green chilies
1 tsp carom seeds (optional but recommended)
1 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp chili powder (+/-)
1 tsp garam masala
4 cinnamon sticks
salt per taste
2.5 cups water
1/4 cup chopped Cilantro (optional)
Directions
- On a large skillet add carom seeds till they are toasted on a low/medium heat. This will take about 1-2 minutes. Add diced onions and water sauté till brown. Keep adding 1 tbsp of water at a time to deglaze.
- Once onions have browned, add minced garlic, ginger and finely chopped Thai chilies. Sauté for a minute, then add remaining spices and sauté for another minute. Add a tbsp of water if spices are sticking to the pan.
- Add your veggies, bulgur, water, gently mix everything. Close the lid and let it cook for about 18-20 minutes on low/medium heat. Make sure to stir at least twice during the cooking process.
- Once ready, add cilantro if you wish, serve with juice of lemon or lime on top and enjoy!
Notes
- Feel free to add any other veggies you have on hand.
- Use of carom seeds in this recipe is what gives it a unique flavor and fragrance.
