minutesTry this 7 ingredient crepes this holiday season. These crepes are healthy, gluten free, high in protein, crispy and even kid approved! Add your favorite fruit on top with some maple syrup. Feel free to add powdered sugar, some coconut whipped cream or some vanilla nice-cream for kids crepes!
Ingredients
1/2 cup Quinoa flour (regular not red)
1/2 cup rice flour
1/2 tsp baking soda
1.5 tsp Vanilla extract
1 cup unsweetened plant milk
1/2 cup water
1/4-/1/2 tsp salt (+/-)
- Toppings:
Fruit of your choice
Maple syrup
Vegan whipped cream
Powdered sugar
Vanilla nice-cream
Directions
- Toss quinoa in a high speed blender and blend till it turns into flour. Add it to a bowl with rice flour pinch of salt and baking soda. Give it a good mix. Then add the wet ingredients. Whisk nicely till there are no lumps. You want to make sure this batter is way runnier than a pancake batter. Leave this to sit for about 10 minutes.
- Heat up a non-stick skillet over medium heat. Stir batter pour and spread out the batter as evenly as possible by immediately tilting the skillet in circular motion. Cook on each side for 3-4 minutes. Repeat the process till all crepes are done. This recipe makes about 7-8 crepes.
- Serve while fresh with your favourite fruit and some maple syrup on top. Sprinkle some powdered sugar for that “extra jazz” or add coconut whip cream for kids crepes on top and enjoy!
