Here is a “healthy salad bowl” inspiration for you. If you’re struggling to lose weight or to maintain, you should incorporate a large salad like this in your daily diet. This salad is loaded with low calorie veggies but yet it keeps you full for hours! Take your time chewing and eating this salad. This is how I easily maintain my weight by eating large salads like this. You can meal prep some of the ingredients by cutting them in advance on Sunday and keep in mason jars to use throughout the week. You can also steam potatoes, beets and keep in the fridge. Whenever you need to whip up a salad, you just toss all the ingredients into a bowl, air fry potatoes or toss in the oven, add your dressing and enjoy! Have fun with this salad & feel free to add your favorite veggies.

Ingredients

  • 1 large handful of mixed greens

  • 2 celery stalks

  • 1 large carrot shredded

  • 1 bell pepper

  • 1/2 English cucumber

  • 1/2 cup cherry tomatoes

  • 1 steamed beet

  • 2/3 cup beans of your choice (I used black beans)

  • 1-2 medium size potato air fried (or baked)

  • 1-2 mandarins

  • 1/3 cup pomegranate seeds

  • 1-2 tbsp nutritional yeast to sprinkle on top (Optional)

  • Dressing:
  • 1 tbsp Tahini

  • 1 tbsp Dijon mustard

  • 1 tbsp maple syrup

  • 1 tbsp lemon juice

  • 1-2 tsp water (depending on your consistency)

  • Salt & pepper per your taste

Directions

  • Chop all your ingredients. Air fry or bake potatoes with your fav seasoning for about 15 minutes. Add all the ingredients in a big salad bowl. Drizzle dressing, some nutritional yeast on top. Mix and enjoy!
