Mashed Eggplant (Indian Style)

minutesIf you like eggplant, give this simple yet flavorful recipe a try. This dish goes really well as a side with any Indian style lentils and rice dishes.
Ingredients
1 large eggplant or 2 medium size eggplant
1 medium red onion
1/3 cup finely chopped cilantro
1-2 Thai green chilies
salt per your taste
Directions
- Preheat oven to 375 F. Wash, dry and poke eggplants with fork, lay on a baking tray and bake for about 25-30 minutes till they soften.
- While eggplants are baking, finely chop onions, cilantro, green chilies and keep aside. Once eggplants are baked, let them cool. Remove skin and any excess water they release. Add eggplants to a bowl, add all the ingredients and salt per your taste. Give it a good mix.
- Serve as a side dish with any other Indian style lentil dishes and rice.
