Ingredients

  • For Pasta:
  • 1 pack of whole wheat pasta

  • 2 cups of cherry tomatoes

  • 2 cups of diced cremini mushrooms

  • 3 cups of water

  • salt per your taste

  • 1.5 tbsp dried parsley

  • 1 tsp chili flakes (+/-)

  • 1 tbsp Italian seasoning (optional)

  • 4 large handfuls of baby spinach

  • For Tofu/Feta Sauce:
  • 1 block of extra firm or medium firm tofu (Recommend medium firm tofu)

  • 1/3 cup apple cider vinegar

  • 7-8 cloves of garlic

  • salt per your taste

  • 1/4 cup nutritional yeast (+/-)

Directions

  • In an instant pot, or stove top, add pasta, water, seasoning and give it a good mix. Add mushrooms, cherry tomatoes. Prepare tofu sauce in a high speed blender and pour it on top. Do not mix the sauce.
  • Close lid, pressure cook for 4 minutes and release. Or cover the lid on a stove top and let it all cook till pasta is soft.
  • Once done, add baby spinach and mix. Serve with your favorite hot sauce on top and enjoy!

Notes

  • To decrease calorie density of this meal, serve it with a side of large salad or more sautéed veggies.
