Vegan feta cheese style pasta

- For Pasta:
1 pack of whole wheat pasta
2 cups of cherry tomatoes
2 cups of diced cremini mushrooms
3 cups of water
salt per your taste
1.5 tbsp dried parsley
1 tsp chili flakes (+/-)
1 tbsp Italian seasoning (optional)
4 large handfuls of baby spinach
- For Tofu/Feta Sauce:
1 block of extra firm or medium firm tofu (Recommend medium firm tofu)
1/3 cup apple cider vinegar
7-8 cloves of garlic
salt per your taste
1/4 cup nutritional yeast (+/-)
Directions
- In an instant pot, or stove top, add pasta, water, seasoning and give it a good mix. Add mushrooms, cherry tomatoes. Prepare tofu sauce in a high speed blender and pour it on top. Do not mix the sauce.
- Close lid, pressure cook for 4 minutes and release. Or cover the lid on a stove top and let it all cook till pasta is soft.
- Once done, add baby spinach and mix. Serve with your favorite hot sauce on top and enjoy!
Notes
- To decrease calorie density of this meal, serve it with a side of large salad or more sautéed veggies.
