If you need a super easy and crispy appetizer this holiday season, then try these healthy spring rolls! These spring rolls are quick to make, and are packed with flavor. They really go well with a sweet chili sauce. Feel free to double up the recipe for more people! We need a tiny bit of oil for this recipe to avoid them from sticking at the bottom in air fryer!

Ingredients

  • 1/2 a block of extra firm tofu

  • 1/4 pack of rice noodles

  • 1.5 cups of finely diced cremini mushrooms

  • 1/2 tsp Chinese 5 spice

  • 1 tbsp minced garlic

  • 1 tsp chili flakes

  • 1-2 tbsp Tamari or soy sauce (+/-)

  • 8 Rice papers

  • Cilantro (optional)

  • Dipping Sauce
  • Use oil free sweet chili sauce

Directions

  • Finely chop mushrooms, add them to a frying pan, add minced garlic, chili flakes, soy sauce, Chinese 5 spice blend and cook for about 7 minutes on medium/low heat. Add scrambled tofu and cook for another 5 minutes.
  • In the meantime, in another pot add boiling hot water and cook enough rice noodles (1/4 of a packet) for the spring rolls till soft. Drain & keep aside.
  • Assemble your spring rolls by dipping rice paper in water for about 15 seconds, transfer to a cutting board, add tofu mixture and rice noodles. Tightly close and fold edges inside. Repeat this process till all spring rolls are prepared. This is really important: Make sure to keep them on a wet surface, apart from each other as they tend to stick.
  • Use 1/2 tsp of any neutral oil and use brush to spread oil evenly in your air fryer basket. Lay spring rolls one by one (make sure they’re not touching each other) and cook for 16-17 minutes at 400 F. Or bake in the oven on an oiled baking tray. Remember to turn them half way through. Repeat this process till all spring rolls are cooked, cut them in half diagonally if you desire and serve immediately with sweet chili sauce.

Notes

  • *If you find your spring rolls are breaking as you assemble them, feel free to double up on the rice paper.
  • It’s very important to keep them on a wet surface as you’re assembling other spring rolls, otherwise they’ll get stuck to the surface and break as you try to pick them.
