1 cup thick rolled oats (I used gluten free)
1/2 pumpkin puree (canned)
1/2 tsp pumpkin spice
1 diced apple
2 cups water
2 tsp maple syrup (or sweetener of your choice)
1/4 cup unsweetened plant milk
6 pecans for topping (optional)
Directions
- Cut apple in small pieces. Toss everything in a pot except pecans and maple syrup. Cook till oats are soft on stove top (about 7-10 minutes). Once oats are cooked, add 1/4 cup plant milk. Transfer to a bowl, add maple syrup and pecans on top. Enjoy!
Notes
- Feel free to add additional fruits such as fresh blueberries or a banana on top.
