Vegan Pumpkin Spice Latte (Low Fat)

Ingredients

  • 1.5 tbsp pumpkin puree

  • 1/2 tsp pumpkin spice

  • 1/4 cup unsweetened soy milk

  • 2/3 cup strong brewed organic black coffee

  • Stevia drops per your taste (or any other sweetener of your choice)

  • Dash of cinnamon to sprinkle on top (optional)

Directions

  • In a pan, add pumpkin puree, pumpkin spice and plant milk. Cook on low/medium heat for about 2 minutes, stirring occasionally to prevent it from sticking.
  • Pour your coffee, add stevia drops, stir and let it come to boil. Once its boiling, turn off the heat and use electric frother to froth your Latte. Pour Latte in your cup, sprinkle some cinnamon on top and enjoy!

Notes

  • Keep a tall coffee spoon in your latte to stir occasionally while drinking as pumpkin puree tends to sink at the bottom of the cup.
  • You can also add Vegan coconut whip cream on top for “that extra creaminess”.

  1. Hi, I don’t have a frother so can I use a stick blender instead?

    • Hi Cynthia, You can just toss warm plant based milk in a high speed blender to make it frothy and add it to the latte. 🙂
