Ingredients

  • 8 oz. Cremini mushrooms

  • 1 red bell pepper

  • 1-2 large carrots

  • 1 large onion

  • 1 tsp garlic powder

  • 1 tsp chili flakes (or adjust per your taste)

  • 1 tbsp. tamari or soy sauce

Directions

  • Wash, dry and cut your onions, mushrooms, carrots and bell peppers. Water sauté onions on low heat till brown. Keep adding more water if needed.
  • Add garlic powder, chili flakes and sauté for about 1 minute. Then add the mushrooms and carrots. Sauté’ till mushrooms start to release water. Then add bell peppers along with soy sauce. Sauté for another 2-3 minutes. Serve on top of your rice, with siracha sauce on top and enjoy!

Notes

  • This quick veggie stir fry is great for a busy weeknight. Feel free to add air fried tofu in this stir fry for extra protein.
