Ingredients

  • 1 cup quinoa

  • 1 cup veggie broth

  • 1 can of diced tomatoes

  • 1 cup chickpeas (from can & rinsed)

  • 1 large sweet potato (optional)

  • 1 large onion

  • 2-3 chopped garlic cloves (optional)

  • 1 cup frozen corn (optional)

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tbsp chili flakes (or adjust per your taste)

  • 2 tsp dried thyme

  • 2 tsp dried parsley

  • juice of 1/2 a lemon

  • 1/3 cup green onions

  • salt per your taste

Directions

  • Preheat your oven to 400 F. Toss all the ingredients in an oven proof pot. Cover the lid and bake for 50 minutes with the lid closed and 10 minutes on grill with lid open to allow some browning.
  • Once cooked, sprinkle chopped green onions on top, serve and enjoy!
