Ingredients

  • 1/2 cup tapioca pearls

  • 1 cup water

  • *1 box (946 ml)of plant milk

  • *1 tbsp. vanilla extract

  • *3 ripe Ataulfo Mangoes (2 mangoes’ for puree & 1 mango for chunks on top)

  • 1/3 cup agave syrup (or adjust per your taste)

  • Mint leaves for garnish (optional)

Directions

  • Soak tapioca pearls for half an hour in 1 of cup water and keep aside.
  • After 1/2 an hour, add milk to tapioca pearls in a sauce pan and let it come to boil on a low/medium heat. Make sure to keep stirring. It takes about 10-12 minutes to cook. Once cooked, add vanilla extract and agave syrup. Stir and let it sit to cool completely. Pudding will get thicker as it cools off.
  • Once pudding has cooled off, you can assemble it with mango puree at the bottom, then pudding, more puree and mango chunks on top. Put it in the fridge to cool for 1-2 hours before eating. Garnish it with mint leaves right before eating and enjoy!

Notes

  • *I used almond milk to keep it low in calories, feel free to use soy milk if weight loss is not an issue. You’ll get better results with soy milk.
  • *Feel free to add any other flavors such as 1/4 cup of cacao powder to make it a chocolate pudding, Switch out the fruits with chocolate chips and some blueberries.
  • *Frozen mangoes can be used.
