Ingredients

  • 1 cup of whole wheat couscous

  • 1.5 cup of water (for cooking couscous)

  • 5-6 mini cucumbers

  • 1 cup cherry tomatoes

  • 1 medium red onion

  • 1 large red bell pepper

  • 1/4 cup chopped walnuts (optional)

  • 1 can of washed & rinsed pinto beans (or any other beans you like)

  • 1/2 cup chopped parsley

  • Dressing:
  • 3 tbsp red wine vinegar

  • 2 tbsp lemon juice

  • 1-1.5 tbsp maple syrup

  • 1 clove of garlic (minced)

  • salt and pepper per your taste

Directions

  • Cook couscous per instructions on the box. once cooked, fluff with fork and let it cool.
  • While couscous is cooking and cooling, chop all your ingredients and toss in a big salad bowl. Once cooked couscous is cooled, add it to the salad. Add dressing, mix and enjoy!
