1 cup of whole wheat couscous
1.5 cup of water (for cooking couscous)
5-6 mini cucumbers
1 cup cherry tomatoes
1 medium red onion
1 large red bell pepper
1/4 cup chopped walnuts (optional)
1 can of washed & rinsed pinto beans (or any other beans you like)
1/2 cup chopped parsley
- Dressing:
3 tbsp red wine vinegar
2 tbsp lemon juice
1-1.5 tbsp maple syrup
1 clove of garlic (minced)
salt and pepper per your taste
Directions
- Cook couscous per instructions on the box. once cooked, fluff with fork and let it cool.
- While couscous is cooking and cooling, chop all your ingredients and toss in a big salad bowl. Once cooked couscous is cooled, add it to the salad. Add dressing, mix and enjoy!
