Ingredients

  • 5 sweet potatoes

  • 2 cups frozen corn

  • 1 can black beans rinsed and washed

  • *organic salsa

  • 1/4 cup chopped cilantro (optional)

  • 1 small red onion chopped

  • 2 tsp club house chipotle mango seasoning

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • salt per your taste

Directions

  • Bake sweet potatoes in the oven at 425 F for 30-45 minutes or until soft. Keep aside.
  • On the pan, toss frozen corn, cook until almost soft. Add canned black beans and all the spices. cook for another 4-5 minutes.
  • Once potatoes are cooked and slightly cool, cut them in half, add corn and black beans/corn mixture, salsa, cilantro, and hot pepper sauce in the middle. Squeeze lime juice if you wish and enjoy with a side of salad.

  • *Organic salsa I used for this recipe is from Costco. Brand name is “Jack Cantina’s Salsa”
